In a world where we are becoming increasingly aware of our environment and how we use resources, it is important to find creative ways to minimize food waste. A perfect example of this is ripe bananas, which are often overlooked when they are a few days old. But before you throw these sweet fruits away, you should know that this is when they release their full flavor and sweetness. In this recipe for banana muffins with a crunchy crumble topping, I'll show you how you can still use these ripe bananas but also how you can make a small contribution to climate protection by baking and cooking them instead of throwing away fruit that no longer looks perfect.

Ingredients:

For the muffins:

  • 2 ripe bananas (approx. 200 g), mashed
  • 120 g sugar
  • 1 egg
  • 60 ml vegetable oil
  • 120 ml milk
  • 1 teaspoon vanilla extract
  • 180 g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the crumble topping:

  • 50 g flour
  • 50 g brown sugar
  • 50 g cold butter, cut into small pieces
  • pinch of cinnamon

Instructions:

Preheat the oven to 180°C and line a muffin tin with paper cases or lightly grease it.

In a large bowl, mix together the mashed bananas, sugar, egg, vegetable oil, milk and vanilla extract.

Sift the flour, baking powder, bicarbonate of soda and salt over the banana mixture and stir just until all the ingredients are loosely combined. Be careful not to "overmix" the batter, as this can lead to tough muffins.

Spread the batter evenly into the prepared muffin tins, about 2/3 full.

For the crumble topping: In a small bowl, mix together the flour, brown sugar and a pinch of cinnamon. Add the cold butter and use your fingers to work the mixture into a crumbly dough.

Sprinkle the crumble over the muffins.

Bake the muffins in the preheated oven for about 20-25 minutes or until a toothpick comes out clean when inserted into the center of a muffin.

Remove the muffins from the oven and leave them to cool in the muffin tin for about 5 minutes before transferring them to a wire rack to cool completely.
