Our supporting member Eni Mousavi has conjured up some great vegan recipes for your Christmas dinner.

On offer today: radicchio with mandarin and baked semolina porridge

You will need the following ingredients:

For the semolina porridge:

  • 500 ml plant-based drink
  • 100 ml oat cream
  • 110 g coarse semolina
  • 1 pinch of nutmeg (more or less depending on taste)
  • 4 tbsp yeast flakes
  • Sea salt and pepper

For the radicchio:

  • 1 small radicchio and 2 mandarins
  • 75 ml olive oil
  • 1 large red onion
  • 1 heaped tbsp brown sugar
  • 3 sprigs of rosemary
  • 100 ml balsamic vinegar
  • 75 ml white wine vinegar

How to prepare it:

For the semolina, heat the plant milk in a saucepan. Remove the pan from the heat and slowly pour in the semolina, stirring constantly.

Bring the semolina to the boil and simmer over a low heat for a few minutes. Then season with salt, pepper and nutmeg. Add the oat cream and stir.

Pour the porridge into a larger or 4 smaller containers and bake at 180 degrees for approx. 15-20 minutes until the semolina has turned a golden color.

Heat a heavy pan on the stove and sauté the quartered radicchio with a little oil. It shouldn't take too long, otherwise the radicchio will dry out.

Put the radicchio to one side and pour the remaining oil into the pan and add the sliced onion. After a few minutes, add the vinegar, rosemary sprigs and sugar and cook slowly.

When the sauce is almost ready, add the mandarin slices. Bring to the boil briefly and season to taste with salt and pepper.

To serve, pour the sauce over a quarter of the radicchio on each plate and add the semolina porridge.
