Today I want to share with you a great baking recipe from Climate Community supporter #ENI MOUSAVI - Sustainable Food Advisor. Here's how to make a delicious vegan carrot cake super fast!

You will need these ingredients:

200 g spelt flour

150 g ground hazelnuts

200 g carrots, grated

100 g sugar

80 ml canola oil

120-150 ml soy milk

1 tsp baking soda

1 tsp baking powder

1 tsp apple cider vinegar

1 tsp cinnamon and a little vanilla powder

1/2 pear, sliced

50 g almond slivers


And this is how it is prepared:

  • Heat the oven to 180°C top-bottom heat.

  • Grease a round baking pan with a diameter of 26 mm.

  • Mix the dry and wet ingredients together in separate bowls.

  • Add the wet ingredients to the dry, quickly mix together and pour into the baking dish.

  • Decorate the cake with the pear slices and almonds.

  • Bake the cake for about 40-45 minutes.
