Elderflower cake

These are the ingredients you need for the dough:

  • 400 g spelt flour
  • 1 pck baking powder
  • 1 tsp baking soda
  • 150 g sugar (to taste)
  • 1 pck vanilla sugar or real vanilla
  • grated zest of half a lemon
  • 250 ml vegetable drink
  • 1 tablespoon apple cider vinegar

And these ingredients for the filling:

  • 500 g strawberries
  • 2 cups of vegetable cream (e.g. from Rama)
  • 3-4 umbels of elderflower
  • Some sugar and cream stiffener

Here's how to prepare it:

Dip the elderflowers in the cream and let them steep overnight.

Quickly prepare a sponge dough from the ingredients for the dough.

It should be noted that the solid and liquid ingredients are first stirred together separately, and then we mix them.

Pour the dough into a baking pan (26 cm in diameter) and bake the cake at 180°C for about 30 minutes.

When the cake has cooled down, cut 2 even pieces along the middle. It works very well with a sewing thread.

Strain the cream and whip it in a cold container with the sugar and the cream stiffener until firm.

Fill the cake as desired.

First, cut the strawberries in half and place them on the bottom half of the cake. Spread with half of the whipped cream.

Place the other half of the cake layer on top and spread the remaining whipped cream over the entire cake.

The cake can now be decorated.
